Apologies for the barrage of food pics. Plated desserts is almost over and I just had to share what we did in class. All of these were taken with my point and shoot in craptastic lighting so the quality’s not so good but you’ll get the gist of it :) Pretty much everyday we plate 2-3 desserts which we have to eat on the spot (which is not as enjoyable as you think after awhile). Some of my favorites aren’t in the mix, the molten chocolate cake, almond panna cotta and creme caramel but after tasting them I’m sure I’ll make them again in the future. Mmm..mmm…mmmm. Here we go…

Pear Financier with Hazelnut Ice Cream. Also with Poached Pears and a dehydrated pear chip. My favorite part to do was the sugar decoration (that swirly thing that is kinda hard to see). Ha my rosemary sprig is falling over.
